Serving temperature: 16°C
The aromas of this wine are complex and subtle. There are fine scents of guignolet (wild cherry liqueur) and candied cherry, fine leather and nutmeg. When the wine is a little older truffle and game tones may be found. The tannins, however abundant and present, are neither aggressive nor coarse. The persistence of the aromas in the mouth is exceptionally important.

Game birds are welcome, grilled or, better yet, in wine sauce. The power of the tannins of the Chambertin appellation permit this shock of textures. Its aromatic complexity and especially its opulence make the difference. Lamb in sauce, coq au vin of course, glazed poultry and prime rib will find a lot of interest for the Griotte-Chambertin appellation. Also, washed rind cheeses are well framed by the power and the aromatic persistence of the Griotte-Chambertin appellation.
