The aromatic power and exceptional balance based on fat and acidity make it one of the great lords of Burgundy, hence it has a natural penchant for noble meats and fish with beautiful texture. Without dominating them, it transcends them: this is the case for beautiful pieces of veal or poultry in white sauce, which are sublimated by the creamy texture of the wine and by its long and distinguished acidity. It is even better with grilled crustaceans in a sauce such as prawns, spiny lobster or lobster, whose aromatic intensity and crunchy texture play with its lively and supple balance. Blue cheeses and foie gras adopt it on the first try.
