The Bouzeron vineyard is located on either side of a very old valley that is partly exposed to the west, which enchants the Aligoté grape variety.
 “Clos de la Fortune” is among the most famous climats. Its southeast exposure is excellent. The name of this climat should be taken literally! It comes from the Latin fortuna - "fortune, happiness, luck". The wall that is visible above “Clos de la Fortune” is probably the remainder of the wall of the fortified enclosure of the site.

In stainless steel vats on lees, in 700 L barrels and 20% in casks. Bottling during the summer to preserve the freshness and liveliness that is typical of the grape variety.

Vinification

Slow and gentle pressing and vinification. Fermentation under temperature control between 18°C and 20°C to respect the delicate aromas of Aligoté.

Supple and consistent, with a texture chiseled with an alert liveliness, it can be tasted at all stages of its life. It is fond of its youth but develops great complexity as it ages and turns into a great wine. Gourmet. 
It can be served as an aperitif with good gougères or with starters such as oysters, parsley ham, Burgundy snail ... and even white meats ...

Food and Wine pairing

With seafood and oysters, this wine will transcend its iodized and saline notes. For fish or shellfish, choose older Bourgogne Aligotés that are capable of revealing their terroirs. Try it with white meats or at the end of a meal with fresh or mature cheeses.
