This parcel as a whole is called Rosey but in the 18th century a small parcel called "Sept Ranches" appeared in the southwest corner near Plantenay. Ranche is a form for the word "ronce " from the Latin ‘RUMEX’ which means "small sorrel, a species of stinger plant". Other variants such as "ronche", "ronde" and "ronze" appear in the place-name history of Burgundy.

In tuns and in 450 L barrels for ten months and then five months of flavor maturation in stainless steel vats.
Vinification
Slow and gentle vinification and pressing. Fermentation under temperature control between 18°C and 20°C to respect the delicate aromas of Chardonnay.

The color is golden with green reflections turning buttercup with sustained age. This wine excels in aromas of flowers such as acacia, hawthorn, honeysuckle or even violet, lemon, white peach or flint.
Food and Wine pairing
With its very nice fruity and ample length on the palate, this wine appeals to fine dishes and tender flesh. One immediately thinks of a pan-fried river fish, a sea fish in white sauce or hot shellfish. It adapts very well to baked cheese such as Comté. This wine will honor beautiful poultry in creamy sauce. It can also be enjoyed as an aperitif.
